Here are a few handy things I’ve learned along the way that might make your life easier. More to come; I’m still learning!
Bread Flour = 1 cup all purpose flour + 1 tbsp gluten flour
Buttermilk = 1 cup whole milk + 1 tbsp fresh lemon juice
Cake Flour = 1 cup all purpose flour – 2 tbsp all purpose flour + 2 tbsp cornstarch (sifted together at least 5 times)
Eggs: When you crack an egg, do it against the flat surface of your counter, not the edge of a bowl. The break will be round with fewer small, jagged pieces, so less chance of egg shell getting into your food!
